Forbes “30 Under 30: Food and Wine”

How much young talent is out there in the world of edibles and potables? Enough that, when putting together the second annual Forbes 30 Under 30 for this field, we decided to retire last year’s honorees and come up with a entirely fresh list.
And why shouldn’t we? Kate Wheatcroft, 27, has lived up to her name, with Bien Cuit, a groundbreaking bakery that next year should put $4 million worth of bread and pastries into the best restaurants in America. Jonas Falk, also 27, provides healthy school lunches to 3 million students each month. At 29, Jeff Zalaznick’s restaurant group has re-imagined what a sandwich can be.
A lot of work went into the list. Vanna Le, Erin Carlyle and Jennifer Eum dug up dozens of potential nominees. The panel’s judges – Union Square Hospitality Group founder Danny Meyer, South Beach Wine and Food Festival founder Lee Schrager and yours truly then spent hours culling, first meeting in-person at Meyer’s North End Grill, and then following up regularly via phone and email. Names were added and discarded, metrics and reputations were vetted, consensus was achieved.
The net result: a list that will help shape our palates for decades to come.
